Xiao long bao resembles steamed dumplings filled with pork and dipped in soy sauce, vinegar and ginger.

Where is it from?

Xiao long bao originally came from Mainland China. However, it has become its own specialty after years of development in Taiwan. The most well-known restaurant for xiao long bao is called Din Tai Fung which was established in 1980. Its fame has rapidly grown xiao long bao’s name around the globe. Nowadays, Din Tai Fung as become the tourist icon in Taipei and also has opened several branches around the world.

How do you prepare it?

Xiao long bao is stuffed with a pork-based filling in a thin skin of dough.

It is then put into a steamer and steamed until the skin becomes translucent. Normally, xiao long bao is dipped in soy sauce, vinegar, ginger and other seasonings for consumption.

Where do you buy it?

Xiao long bao is sold at night markets all over Taiwan.

小籠包

台灣的小籠包是由江浙、上海籍人士隨國民政府遷台時所傳入,經過多年在地的改良與研發,已有台灣的特色。

1980年鼎泰豐小吃店的崛起,推動台灣小籠包揚名國際, 並在1993年被美國紐約時報評選為世界十大著名餐廳之一,現已成為台北觀光美食的地標。鼎泰豐已在全球多個國家開設多家分店,如日本、韓國、美國等等,也讓小籠包成為除台灣之外都可吃到的美食。

作法是將麵粉揉勻,均分為定量的小麵糰,接著用桿麵棍桿成麵皮,把餡料放在麵皮的中間,再把四周的麵皮拉起來包好,放進蒸籠蒸數分鐘即可。食用時經常搭配鎮江醋或米醋加細薑絲。

小籠包是台灣各大夜市常見汁多味美的小吃,也是外國旅客來台必吃的美食。
