花生捲冰淇淋又名潤餅冰, 為宜蘭美食之一。顧名思義,其為花生加上冰淇淋,外觀形狀與春捲相似,是夏天消暑的甜點。

製作花生捲冰淇淋時,將一片潤餅皮放在乾淨的桌子上,用刨刀在大塊花生糖刨出粉末,將花生糖粉倒在潤餅皮上,再將冰淇淋(台語中俗稱『叭噗』)以約兩至三球的份量,放在花生糖粉上,以刨刀刨削花生糖塊,再將刨下的花生糖粉灑在冰淇淋上,加入香菜。最後,將餡料捲起來,如捲春捲的方式一般,即可食用。花生捲冰淇淋結合現代和傳統食材,其中冰淇淋和香菜的衝突感,給饕客一種新鮮的味覺享受。
