檸檬愛玉 Lemon-Flavor Fig Jelly

The dried ripe fruit was rubbed to produce fig jelly. It has a smooth and soft texture with slight herbal fragrance. With lemon juice, the special taste and thirst quenching qualities make it the most welcoming drink.

Where is it from?

It is widely believed that Fig Jelly was discovered by a young woman. The young woman went to the mountains with her father and found out that there were jelly-like substances floating on the water along the river. Her curiosity was aroused and she tasted the transparent substances. She was surprised by the special taste and the coolness. Besides, it is also thirst-quenching. On their way home, they saw many fruits lying along the riverside, so the young woman picked one up and rubbed it gently. Unexpectedly, juice came out and finally became solidified jelly. The young woman and her father picked some of the fruit to bring home and they had invented fig jelly.

How do you prepare it?

First of all, ripe fruits should be collected and shelled. Next, you need to split the fruit in half and expose it to the sunshine or put it into a dryer for a while. Then after rubbing the dried fruits, the natural pectin comes out and finally solidifies into a jelly like substances.

Fig jelly has a smooth texture with slight herbal fragrance. People usually eat it with lemon juice, so it tastes sweet and sour. Lemon-flavor fig jelly also contains high fiber, is low in fat and is very thirst-quenching. People enjoy it in the form of ice or drinks. Therefore it is very popular in the heat of summer.

檸檬愛玉 

愛玉的起源據說是一位名叫愛玉的女子與父親到嘉義山區辦山產,發覺水面有許多結塊的凍狀物,好奇盛起啜飲,發覺其口感特殊,且清涼解渴。他們之後又看到溪畔有許多落果,便隨手拾起一顆搓揉,果實出漿凝結成凍,於是帶回落果研發出愛玉凍,並交由女兒販售,有人便以「愛玉」稱呼這種食品。

採收愛玉時宜分次採取成熟果,然後削去外皮,一半切開,使瘦果充分曝露,以利用陽光曬乾或乾燥機烘乾。瘦果經過手工搓洗出果膠後,經常溫靜置後可凝結為愛玉凍。愛玉有果凍般滑口清涼又軟Q,略帶淡雅草香味,常搭配檸檬汁食用,酸酸甜甜,具高纖低脂、消暑解渴的特性,在炎炎夏日裡無論是製成飲品或是冰品,都備受歡迎。

愛玉在臺灣各大夜市飲料攤、冰品店都有販賣。
