Where is it from?

In the Japanese colonial period, many Japanese moved from Okinawa to Penghu and operated quite a few bakeries. Okinawa is famous for brown sugar, and brown sugar cake was invented by a Japanese baker. At that time, a lot of elderly people living in Penghu loved this dessert after eating it, and learned how to make it. Brown sugar cake not only served as a dessert for eating but also as a sacrifice to the deity. After the restoration of Taiwan, the increasing number of Penghu residents went to Taiwan for work and shared brown sugar cake with their colleagues. It gradually became the feature of Penghu.

How do you prepare it?

The production process of brown sugar cake is simple. Mix cake flour, brown sugar liquid, baking powder, eggs, and salad oil together. Then put the mixture in a vessel and steam it. Finally, sprinkle on sesame seeds, and brown sugar cake is ready to serve. The feel of the cake is springy and the brown sugar spreads the sweet taste and aroma around the cake.

Where do you buy it?

In Penghu, there are approximately 7 shops selling brown sugar cake. The taste and texture vary in different shops. You can choose whichever you like. Although brown sugar cake is a specialty in Penghu, you still can find this delicacy in other areas of Taiwan.

黑糖糕 

日據時代許多沖繩人來到澎湖,開設不少日本糕餅店,而沖繩以黑糖著名,黑糖糕就是由一位日本糕餅師傅所發明。許多老人家吃過後很喜歡,紛紛學習它的作法,除了自己吃之外,也將它當作供品祭拜神明。台灣光復後,隨著越來越多澎湖人到台灣本島工作,將黑糖糕分享給同事,這項點心漸漸成為澎湖名產。

黑糖糕的做法簡單,將低筋麵粉、黑糖液、泡打粉、雞蛋、沙拉油混合均勻,倒入容器中蒸熟,最後灑上白芝麻即可完成。黑糖糕口感綿密有彈性,黑糖則香氣十足。

澎湖有六、七間黑糖糕專賣店,每間店的黑糖糕口感跟味道也不太一樣,顧客可選擇自己喜歡的店家購買。雖然黑糖糕為澎湖的特產,但是在台灣本島的許多糕餅店也可以買到。
