Herbal rice cake is a salty chewy snack consisting of radish slices and minced pork as the inner portion and glutinous rice and mugwort as the outer part.

Where is it from?

The origin of herbal rice cake is untraceable. However, it has been the indispensable sacrifice on Tomb Sweeping Day for a long time. A saying in Taiwanese goes “worship with rice cake, come the property.” It means if you take rice cake as an offering to the ancestors, they will bless you and assure the offspring of getting more property. No matter if it is the culture of Southern Fujien or Hakka, herbal rice cake is essential in many customs.

How do you prepare it?

Herbal rice cake is a salty snack. The inner part of the cake fills with radish slices, minced pork, and dried shrimps. The outer part is made from glutinous rice and mugwort. Because of mugwort, the outer part has a color of green. The herbal rice cake is steamed. Thus the outside is chewy, the inside is crunchy, and the fragrance is rich.

Where do you buy it?

Although herbal rice cake is a traditional sacrifice on Tomb Sweeping Day, you do not have to wait until that time to buy one. It is sold in many traditional markets in every area, especially in Jioufen, Taipei and Fenglin, Hualien, which are renowned for herbal rice cakes.

草仔粿

草仔粿又稱鼠麴粿、鹹龜粿、艾草粿,客家人稱之為艾粄,它的緣由已不可考,但卻是清明節不可或缺的傳統祭品,台語裡有句俗語「拜粿有傢伙」,就是指拿粿來祭拜,祖先會庇佑子孫增添財產。不論是閩南或者客家族群,草仔粿在習俗上都是非常重要的。

草仔粿是一種鹹的點心,外皮的原料是糯米及艾草,艾草也可用鼠麴草代替,兩者皆為綠色,因此粿的外皮也呈現綠色;草仔粿裡頭包的是炒過的蘿蔔絲、碎豬肉、蝦米等餡料。它的烹調方式採用蒸籠蒸,吃起來粿皮非常彈牙、有嚼勁,內餡脆而不硬,香氣十足。

雖然草仔粿是清明傳統祭品,但是不用等到清明節,在各地的傳統市場裡一般都可以買到新鮮的草仔粿,其中又以台北九份、花蓮鳳林的草仔粿最有名。
